Steamed Vegetarian Dimsums

Momos are light on the stomach and healthy as they are made with minimum amount of oil , steamed and can be made with a variety of stuffings to make it your signature dish."

  • Preparation of the wraps-.
  • Grind the semolina to a fine powder . In a bowl put the powdered semolina , add 2 tsps of oil and mix well . Add water little by little and make a soft dough. Grease the dough with a teaspoon of oil to keep it moist. Semolina absorbs more water compared to wheat flour so the dough must be soft yet stiff and not soggy. Cover with a cloth and keep it aside for one hour.
  • Preparation of the stuffing –.
  • Cut the cabbage , carrots and french beans into fine pieces, put into a bowl . Add the corn kernels , a little water , a pinch of salt and pressure cook. In a wok add 1 tsp oil . Once the oil is hot add mustard seeds , when they splutter add grated ginger and finely cut garlic. Saute till well fried . Add the boiled vegetables to the wok after draining the excess water which can be used as stalk to make soups. Add oregano & chilli flakes or pepper powder and salt according to taste . Sir fry till all the spices are absorbed by the vegetables and all the water content is evaporated. Keep aside and cool the stuffing.
  • Make small balls the size of a grape from the dough made with semolina . Roll them out into thin circular sheets . The dough stretches well so roll it into as thin sheets as possible by dusting small amount of all-purpose flour as and when required . Place a spoonful of the stuffing in the centre of a wrap , place it on your palm , from one end of the wrap fold it with your fingers by holding both sides moving from one end to another and the shape showed in the above image will be obtained. If one is not comfortable folding the dimsums this way one can fold them in any other way known.
  • Pour sufficient water in the cooker , grease the idli stand plates , place the momos and steam them for 10-12 minutes . The momos can be steamed in a steamer as well . Enjoy them with tomato sauce.
