  1. Take 2 dozen coarse spring onions and chop them into small lengths, then simmer in milk until tender.
  2. Meanwhile, boil or steam potatoes and mash them with a little milk.
  3. Strain the onions, add them to the potatoes, mix well and serve very hot, with a knob of butter.
