- 2 2⁄3 tablespoons chopped green bell peppers
- 1 1⁄3 tablespoons thinly sliced celery
- 1⁄3 small onion, chopped
- 1⁄3 garlic clove, minced
- 1 cup peeled chopped tomato
- 1 teaspoon red wine vinegar
- 1 dash fresh ground black pepper
directions
- Coat a nonstick skillet with cooking spray. Place over medium-high heat until hot. Add the bell pepper, celery, onion, and garlic. Sauté for 5 minutes or until the vegetables are tender. Add the tomatoes, vinegar and black pepper.
- Bring to a boil. Cover, reduce the heat, and simmer for 15 minutes, stirring occasionally.
