Sticky Date Toffee Pudding

- 150 g stoned dates, chopped
- 75 g unsalted butter
- 100 g soft light brown sugar
- 3 eggs, beaten
- 175 g plain flour
- 1⁄2 teaspoon bicarbonate of soda
- 1 tablespoon vanilla extract
- 100 g unsalted butter
- 175 g soft brown sugar
- 125 ml double cream
directions
- Preheat the oven to 180degree celsius.
- Lightly grease 6 x 175ml ramekins.
- Place dates in a pan with 200ml boiling water and summer for 10 minutes.
- Place the rest of the ingredients (Except for the last 3 items) in a bowl and mix until well-combined. Add dates mixture and beat further until combined.
- Spoon mixture into ramekins and bake for 15 minute.
- Melt the last 3 items in a saucepan until sugar is dissolved. Bring to boil and remove from heat.
- Spoon sauce over pudding for a decadent treat!
