Stir-Fried Asian Vegetables

"As with most stir-fries I add and delete ingredients depending upon what I have on hand. This is a good basic veggie stir-fry from Cooking Light. Prep all of the ingredients before you start cooking because the cooking phase is quick."

  • Combine first 5 ingredients in a small bowl; stir with a wire whisk until well-blended.
  • Set aside.
  • Heat oil in a wok or large nonstick skillet over high heat.
  • Add carrot, celery, and onion; stir-fry 2 minutes.
  • Add snow peas, corn, and mushrooms; stir-fry 2 minutes.
  • Add broth mixture; stir-fry 1 minute or until thick and bubbly.

  1. Very good stir fry! I couldn't find just snow peas.....all I could find was a mix of snow peas, broccoli and carrots. I added the corn, onions, and mushrooms. Adjusted the sauce to accommodate the amount of vegetables. We really enjoyed this easy to make recipe! Thanks for sharing.....made for your win in Divisional Playoffs Football Pool.
     
  2. This is a great recipe. The sauce was delicious and as has been remarked many different veggie combinations would work. I did not use baby corn or mushrooms due to personal preference. I bet broccoli would be good too! Thanks for sharing.

  4. Delicious! We loved this quick, easy, and very tasty stir-fry. I served this with Spicy Ginger Chicken and it was the perfect side dish. I used all of the vegetables as written, though I doubled the amounts of the carrot, celery, and onion. We loved the addition of the straw mushrooms and baby corn. Also, I used peanut oil instead of the vegetable oil because I prefer it in stir-fries. Thank you for sharing this wonderful recipe...it is definitely a keeper!! *Made for 2009 Football Pool*
     
  5. This was even better than we imagined it would be! We ended up leaving out the baby corn and used sliced fresh mushrooms instead of canned. We also added some broccoli and sliced peppers. We did make the sauce exactly as stated though, and it was so tasty. Thanks for the great recipe!

  1. Just now when I saw Jube's picture, I said, "I forgot the peas!" But it was really good anyway. And easy to make. I used button mushrooms instead of the canned straw mushrooms. Reveiwed for ZWT4.
     
  2. Made for ZWT4 for the eat more veggies challenge...This was good. I made as stated except used broccoli instead of the carrots and used regular mushrooms instead of straw mushrooms. I also added some sprouts.
     
  3. I love this vegetable stir fry recipe! It went great with "Recipe#137896". I used snap peas in place of the snow peas and I used baby bella mushrooms in place of the straw mushrooms. It was delicious! Made for Zaar World Tour 4.
     
  4. A very versatile veggie stirfry recipes where you could easily switch in and out with whatever vegetables you have on hand. I used normal mushrooms, fresh baby corn rather than canned and green onions rather than white because that is what I had and it was a very tasty lunch. Also, because I have to really watch my fat intake I used a splash of rice wine vinegar instead of the oil to 'fry' the veggies. I also used splenda instead of actual sugar and it all worked and tasted great. Made for Zaar World Tour 4.
