Stir Fried Chicken and Broccoli

"This is a recipe from Dorothy Huang, a wonderful Chinese cook in Houston, Tx. It is really fairly easy. Don't forget to start your rice before you begin to cook!"

  • TO PREPARE AHEAD:

  • Slice chicken across the grain into pieces 1/8 inch thick.
  • Toss chicken and marinade in a bowl.
  • Mix well.
  • Let stand 30 minutes.
  • Wash and drain broccoli and cut into bite size pieces.
  • Mix ingredients for thickening sauce in a small bowl.
  • TO COOK: Heat 2 tablespoons oil in wok or frying pan over high heat.
  • Add broccoli and salt and stir fry for 4 minutes.
  • (Add a teaspoon of water if it gets too dry.) Transfer to a plate.
  • Wipe out the wok or pan with a paper towel.
  • Pour in 3 tablespoons oil.
  • When hot add chicken, garlic and green onions.
  • Stir fry until chicken is cooked firm and white, about 4 to 5 minutes.
  • Return broccoli to wok and add thickening sauce.
  • Stir until thick.
  • Serve with rice.

  1. This is so tasty. It's also great with beef and beef broth, but all other ingredients the same!
     
  2. This was good but beware while making the thickening sauce to stop adding ingredients when you get to the sesame oil. All the ingredients below that are used for other steps. I effectively doubled the oil and salt by mistake. It was still tasty, even though it was like eating an oily block of salt.
     
  3. only thing i suggest is to make more sauce and to add a little rice wine vinegar or else all the soy sauce makes it a little salty.
