Strammer Max - German Warm Sandwich

"Strammer Max means stiff or tight Max which is Saxon slang and means exactly what you think it means. Traditionally it's a butter fried slice of bread with ham and a fried egg. My MIL uses to make this version every time she wants to make a quick dinner."

directions

  • Toast and butter bread and spread with bacon and sliced tomato while heating a lightly oiled skillet.
  • Fry the egg to desired doneness, season with pepper and top with grated swiss cheese.
  • As soon as cheese has melted, transfer the fried egg on top of the sandwich, serve immediately.
  • Enjoy!

  1. Oh Mia, this was so delicious. I am not sure why I have never tried this combination, but I loved this open faced sandwich. I only had cherry tomatoes in the house, so had them on the side to eat with each bite of the sandwich. I found I actually preferred them between bites, so I could really enjoy the bacon, egg and cheese flavors unadulterated. So super.
     
  2. It never occurred to me to combine my buttered toast and my egg into a single 'open faced' sandwich. I used store bought fully cooked bacon to speed things up, and zapped 2 slices about 10 seconds in the microwave. I also made a scrambled egg instead of over easy, seasoned with pepper AND salt, put the tomatoes on the side and used shredded havarti instead of swiss. The concept was still the same, but I never buy swiss cheese and don't really care for tomatoes on sandwiches. I also made one for my mom without bacon (she doesn't like it) and we both thought it was really good.

  4. Made for FYC tag game! Had this for "breakfast for dinner" tonight. Used the bacon grease to fry the eggs in. Enjoyed with shredded hash browns. Very delicious open-faced "sandwich". We really enjoyed this tonight. Thanks for sharing!
     
  5. Made for the FYC Tag Game, breakfast is my DH's favorite meal & this this exact recipe is his favorite choice from all the options. I basted the eggs so all the white was cooked, but the yolk stayed intact ,,, used Gouda for the cheese ... & was liberal w/the pepper grinder. When I really want to spoil him, fried potatoes & fruit accompany this breakfast. Thx for sharing the recipe w/us.

Tweaks

  1. Scrambled instead of fried egg. Tomato on the side. Havarti instead of swiss. seasoned before frying egg with salt and pepper.
     
  2. I've been making something like this for many years, based on a sandwich we used to buy at the corner Greek diner kitty-corner from where I worked. I made this with a lovely ham instead of bacon, and instead of butter - which would have been lovely - I used some horseradish cream I had, which worked so well with the other ingredients. I also topped it with a second slice of toast - just to make it easier to eat!
