"A friend shared a recipe with me for a salad similar to this a while back. I lost the recipe, but adapted the dish to my family's tastes. We love this refreshing twist on a healthy salad."

  • In a bowl, add juice from one lemon, 2t balsamic vinegar, 1/3 c sugar, 1 tablespoon of olive oil. and 1 teaspoon of poppy seeds. Whisk until well blended.
  • Wash and dry salad greens. In a large salad bowl, arrange greens, optional ingredients, strawberries, and toasted nuts. Pour dressing over top and toss well. Serve immediately.

  1. If I'm right, the original for this recipe came from "The Pampered Chef", but this way is better with the balsamic vinegar. This is such a sweet refreshing way to eat spinach salad! I love it!
