Directions

  1. Preheat oven to 350°F.
  2. In a large bowl, beat eggs until frothy.
  3. Mix in oil, sugar, mashed strawberries and mashed bananas.
  4. In a separate bowl, combine flours, oats, baking powder, baking soda and salt.
  5. Stir to mix thoroughly.
  6. Add to wet ingredients.
  7. Stir until moistened.
  8. Turn into a greased 9x5x3-inch loaf pan.
  9. Bake for 50- 60 minutes or until toothpick inserted in centre comes out clean.
  10. Cool for 10 minutes then remove loaf from pan to cool completely on rack.
  11. Wrap well and allow flavour to blend for at least one day.
