- 16 ounces frozen whole strawberries or 16 ounces mixed berries
- 1⁄2 lemon, lemon juice from
- 1⁄3 - 1⁄2 cup sugar (depending on how sweet you want your jam)
directions
- Stir the frozen berries and sugar in a 2-quart measuring cup or other microwave-safe dish.
- Microwave, uncovered, on HIGH for 2 minutes.
- Stir and cut the large berries into smaller pieces.
- Add the lemon juice and stir.
- Return the dish to the microwave and cook for ten minutes, stirring after 5 minutes.
- Watch the mixture and stir again, if needed, to prevent the jam from boiling over.
- Test the thickness of the jam by putting a spoonful on a small saucer and placing it into the freezer for a minute. This is about how thick your jam will be when it is cooled.
- If you want thicker jam, microwave for 2 to 4 more minutes, stirring as needed.
- Allow the jam to cool. Pour it into storage containers. Jam will keep in the refrigerator for up to 2 weeks, and in the freezer for 3 months.
