Directions

  1. Preheat oven to 350 degrees F.
  2. Put strawberries in a blender or food processor and pulse a few times (not quite to puree).
  3. Mix mayo, sugars, and vanilla into strawberries.
  4. Mix together flour, cinnamon, and baking soda and sift into wet ingredients.
  5. Mix until just combined.
  6. Pour batter into greased muffin tin.
  7. Bake until tester inserted in center comes out clean, about 30 minutes.
