  1. Heat the oven to 425F.
  2. Grease just the bottoms of a 6/12 muffin cup.
  3. Slightly smash up the strawberries with a folk in a large bowl.
  4. stir in the sugar, oil and the eggs until nice and mixed.
  5. stir in the other ingredients until nice and moistened.
  6. spoon batter into the muffin cups.
  7. then bake for 15-18 minutes or until light golden brown.insert a toothpick through the center if desired and make sure it comes out clean.
  8. Then cool for 5 minutes.
  9. get a knife and gently loosen the sides of the muffins from the pan if needed.
