  • Preheat oven to 425 degrees.
  • Sift the dry ingredients together several times.
  • Blend egg and milk and stir into dry ingredients.
  • Add butter and quickly fold in strawberries.
  • Fill 12 greased muffin tins 2/3 full.
  • Bake for 20 to 25 minutes, until golden.
  • Sprinkle with powdered sugar.

These days I have a 50-mile commute one-way to work. My recipes must be healthy but also quick and simple. I love to cook and love finding new recipes that incorporate lots of veggies. I'm don't each starches with my meals but still have to cook them for my family so anything new to avoid monotony is huge with my meals.
