Strawberry Ricecake Dessert
"I came about this by chance....I thought one day...hmmm I enjoy rice cakes although sometimes they can be boring, I love cream cheese desserts and strawberries, well..... they're my favorite. So why not put them all together. I really enjoy this in the evening when I have a craving for something sweet and fresh. You can make it for one or for as many as you'd like. Hope you enjoy as much as I do."

- 8 ounces cream cheese (soften at room temperature)
- 7 ounces marshmallow creme
- 12 ounces Cool Whip
- fresh strawberries

directions
- In a large bowl mix cream cheese with marshmallow creme. Mix well then add your Cool Whip and mix well just a few spins with hand mixture then with spatula continue to fold in well.
- Take a rice cake, spread approx 1 tablespoon of cream cheese mixture on top and then top that off with sliced fresh strawberries.
- Enjoy!
