“This is a great summer salad that tastes awesome. I had all the ingredients and was suppose to bring a dish to a cookout. I put it together wondering if people would like it, and instead, it ended up getting eaten all up. I love this salad!!”

Directions

  1. Brown pecans on a butted baking sheet at 350 degrees for 10 minutes.
  2. In a large serving bowl, mix together spinach and strawberries.
  3. In a separate bowl, blend together vinegar, salt, oil, mustard, sugar, onion and poppy seeds. (I use my Vitamix blender- it blends so smoothly).
  4. When you are ready to serve, toss in pecans. Gently toss dressing into spinach and strawberries before serving.
