Strawberry Squash

"This tasty strawberry treat is from THE BEST OF COOKING by Arne Kruger & Annette Wolter & it included a pineapple variation I have also noted. It was described as a "pre-dinner" drink, but works as an after school treat or dessert & might also be fun for a family of 4 to share ... as written for the kids for the 1st 2 portions & then adding 2 tbsp rum for the 2 adult portions. (Time does not include 30 min for the strawberries to "sit" in the sugar) *Enjoy*"

  • Halve strawberries & place in a bowl. Sprinkle w/the sugar, stir to combine & leave for 30 min for juice to be extracted.
  • Using a blender or immersion blender, puree strawberries & juice created.
  • Add ice cream, milk, lemon & orange juice, lemon zest + confectioner's sugar & blend till well-mixed.
  • Pour into 4 glasses & add 1 ice cube to each glass.
  • NOTE: I entered this recipe as written, but dislike a watered effect from ice cubes. So I freeze the milk in a freezer container as my 1st prep step. Using very cold milk w/ice crystals that often form means no ice cubes are needed when prep is done & you are ready to serve.
  • VARIATION: Replace strawberries w/canned or fresh pineapple & use vanilla ice cream.

  1. I made the variation using vanilla ice cream and canned crushed pineapple. I left out the confectioners sugar and didn't bother adding the ice cube at the end. It makes a nice, refreshing snack and would be a great after-school treat. Made for Football Pool 2012.
     
  2. Oh my this was good. I used frozen sweetened strawberries, and skipped the maceration step. I also skipped the confectioner's sugar, as we found it just sweet enough with the ice cream. I love the citrus flavor that comes through with the strawberries. This is a very delicious drink. Made and Reviewed for Football Pool #17 as a recipextra - Congrats on your win! Thanks :)
     
  3. Twissis this is a wonderful refreshing drink!!! I cut back to serve one and didn't have time to freeze the milk nor get a picture before I had to get to an appointment in the morning. This was my quick morning breakfast using frozen strawberries, so I think that helped out with the milk not slightly frosted. I loved the combination of flavors from the strawberries with the lemon and orange. What a great treat made in your honor of your football pool win!!!

  5. REFRESHING and delightful strawberry drink. My daughter and I really enjoyed this bevy! I put fresh strawberries in the freezer yesterday for this drink and followed the instructions completely except for omitting the ice cubes since I followed your instructions on the milk!
