Strawberry Tofu Spread

"Fruity and good on bagels, toast or as a unique sandwich spread (I like it spread on toasted pumpernickel, spinkled with sliced almonds topped with baby spinach, sliced fresh strawberries and gruyere). Serving size is ~ 3 Tablespoons"

  • 12 ounces firm tofu, drained
  • 8 tablespoons strawberry preserves, all fruit type like polaner
  • 2 tablespoons honey
  • 2 teaspoons lemon juice

directions

  • Combine all ingredients in a food processor and blend until smooth.
  • Scoop mixture into a container for storage in the refrigerator.
  • Use within 2 weeks.

  1. Wow, this is really good. I've been trying to find good tofu recipes, since most I've tried are bland and too "tofu" tasting. This is a winner. The only thing I changed was that I mashed it together with a potato masher and added some thawed frozen strawberries. Next time I think I'll try blueberry.
     
  2. We've never tried mixing fruit with tofu before and were a little aprehensive! Used 4 Tbsp of honey to suit our tastes, otherwise no changes. We used the spread on bagels and also took the sandwich suggestion in the description... what a great sandwich! We'll definitely make this again and are thinking about using your honey nut tofu spread with the same sandwich indregients... sounds so yummy!
