Strawberry Yogurt Soft Cookies

"I was looking for a recipe copy of commercially available BearPaws, but couldn't find one. My kids love them, but I wanted something healthier for them, and less expensive. So, I decided to try to recreate it. This recipe could be easily doubled."

directions

  • Chop strawberries (I used my mini food processor).
  • Mix all wet ingredients together.
  • Add the dry and mix until combined. The mixture will be slightly wet.
  • Drop by large spoonful onto parchment lined cookie sheet.
  • Bake at 350 for approx 12 minutes.
  • * If you like a sweeter cookie, or use plain Greek yogurt, you could add more sugar.
  • The texture of this cookie is soft, and muffin-like.

I've been married since 2002, and in that time, we have moved across Canada. Met when he was in Alberta and I was working in Saskatchewan, moved to Trenton, Ontario, and then to Halifax and now we are in Manitoba. I am lucky to have a husband who is willing to try anything I make, and will even eat it if it's not so great.
