  • Cut the beans into 2 inch lengths and cook uncovered in plenty of salted boiling water until barely tender , about 10 minutes.
  • Drain and rinse under cold water and set aside.
  • Heat butter in a large skillet.
  • Add the onions and parsley and saute until lightly browned.
  • Add the tomatoes and simmer 15 minutes.
  • Add the beans , vinegar , salt. pepper and nutmeg and toss until beans are heated,
  • Serve immediately.

  2. Mmmmmmm...I really enjoyed the onions and tomatoes in this dish. It gave the beans some pizzazz. The slight tanginess from the vinegar really works in this dish also. I think next time I make this, I am going to add some crumbled up bacon. Made for ZWT5.
     
  3. Just the right extra flavor for an old standby. We really enjoyed the addition of the vinegar and parsley. (I thought there was way too much parsley when I added it, but it cooked up just right.) The serving size may be a little large for a side - we got four comfortable lunches of just this dish, no main course.
     
  4. Yum! We made a half batch of this as a side to Recipe #371024 and loved it. My only modification was to use canned tomatoes as we were out of fresh ones. Reviewed for ZWT5.
     
  5. These were a great side dish accompanying a chili I made for dinner tonight. The vinegar gives it a little bit of a sour kick but the fresh onion and tomato compliment the flavor nicely. Made for ZWT 5. Thanks Brenda for a great recipe!

<p>I have 5 kids, 12 grandkids and now have 6 great grandchildren. I don't get to see them as much as I would like. I love to garden and I am also a broadcaster on radio and the net.. Recently married to an American although remarriage is something I thought I would never do again. He traveled 3000 miles with his cat to come to marry me. <br /><br />I owned my own craft store for 10 years but gave that up after a huge craft discount depot opened just 4 blocks from me. I used to teach 6 days a week; crafts like quilting, dried wreaths, Christmas ornaments, etc.</p> <p>I &nbsp;had open heart surgery and recovered nicely.I am not the best patient in the world as I want to get going and get back to work and my life as I knew it.</p> <p>I have retired and do help out at a soup kitchen for the homeless and 1 morning a week I make French Toast at a community center that supplies 26 schools with free snacks and sandwiches&nbsp; for the kids <br />I have been knitting blankets for Blankets for Canada an organization that helps the&nbsp;homeless keep &nbsp;a little bit warmer. I also knit for many different charities that supply kids with warm clothes.
