Stuffed Acorn Squash

  • Cut the Acorn Squash in half lengthwise. Remove the seeds. Place the squash cavity side down on a shallow micro wave dish. Cover the squash with plastic wrap. Poke several holes in the plastic wrap to vent stem.
  • Place in microwave on high for 15 minutes.
  • While the squash is cooking, saute Italian sausage. If the sausage was purchased in link form, remove from casing and mix with onions. Saute until it is done but not browned, drain it.
  • When the squash is done, carefully remove plastic wrap and place the squash cavity side up in a bowl so that it doesn't rock around. Salt & pepper to taste and file the cavity with the sausage onion mixture.
  • Serve hot.

I have been cooking since I was 8 years old. My mother was a great cook and as a bachelor, I thank her daily for getting me started cooking and teaching me the basic domestic skills. (Cooking,sewing, washing and ironing. I paid my way through college cooking. I cooked in a college cafeteria that feed 2 large dorms and on weekends, I cooked for 27 guys in my fraternity on weekends when the regular cook was off. I really get a lot of enjoyment from cooking food for people that they enjoy.
