- 2 large sweet potatoes
- 1⁄4 red onion, chopped
- 2 garlic cloves, chopped
- 1 large head of broccoli, florets chopped (save the stems for another time)
- 1 cup spinach, chopped
- 1⁄2 lb chicken sausage
- 1⁄2 tablespoon butter
- 1⁄2 cup shredded cheddar cheese
- sour cream (optional)
directions
- Preheat oven to 450.
- Bake sweet potatoes for 35 minutes.
- Blanch broccoli in boiling water for 4 minutes.
- remove sausage from casing and saute till cooked through crumbling as you go.
- add onion and garlic to pan and cook till onion is tender.
- Cut open each potato and flush the inside with a fork.
- Top each potato with a pad of butter, chopped spinach, broccoli, sausage mixture and cheese.
- Put back in oven and bake until cheese is melted.
- Top with sour cream if desired.
- Serve Immediately.
