  • Preheat oven to 450.
  • Bake sweet potatoes for 35 minutes.
  • Blanch broccoli in boiling water for 4 minutes.
  • remove sausage from casing and saute till cooked through crumbling as you go.
  • add onion and garlic to pan and cook till onion is tender.
  • Cut open each potato and flush the inside with a fork.
  • Top each potato with a pad of butter, chopped spinach, broccoli, sausage mixture and cheese.
  • Put back in oven and bake until cheese is melted.
  • Top with sour cream if desired.
  • Serve Immediately.
