Stuffed Chicken

"I created this recipe from what I had in the fridge at the time, it's my boyfriend's favourite and it's requested constantly! In the winter I sometimes cover the chicken with breadcrumbs and substitute goats cheese for brie and chutney for cranberry sauce, it's a perfect meal for around Christmas!"

  • In a thick fry pan melt butter and gently brown the outside.
  • Salt and pepper.
  • After breasts are browned remove from pan and place in an oven-proof dish, and cover.
  • Cook until done.
  • Take them out and let cool for 5 minutes.
  • When cooled, slice length-ways in half with a very sharp knife.
  • Spread flat side with goats cheese and chutney.
  • Close breast and wrap in parma ham.
  • Continue steps for other breasts and place back in oven-proof dish in the oven without cover for an additional 5-10 minutes.
  • Remove from oven and serve.
  • Enjoy!

I moved to England 5 1/2 years ago with my family, last summer my parents moved back home and I stayed here in Yorkshire with my boyfriend. I found it difficult at first and began missing my favourite foods like pancakes and cakes; the food here just isn't the same! I was brought up with pancakes and breakfast sausage on a Saturday morning, but it was always 'Hungry Jack' or 'Aunt Jemimas' so I never realised you could make it from scratch from stuff I always have in the cupboard!! Since finding RecipeZaar, my boyfriend has gaining about 15 lbs!! It has really been my saving grace here! I love to bake and cook, and love that I can find all those good American foods here, (with just a bit more work!) but also some new and exciting things I would have never thought of making! I'm a bit of a gourmet, and love expirimenting with fresh ingredients and different ideas!
