Stuffed Chicken Breasts

  • Preheat oven to 400°F Coat a shallow roasting pan with cooking spray.
  • Using a sharp paring knife, slice a pocket into each chicken breast, without cutting completely through to the other side. Arrange chicken in prepared pan and set aside.
  • In a medium bowl, combine blue cheese, almonds, apple and dill. Add a pinch each of salt and pepper. Mix together with a fork until mixture is well blended and comes together.
  • Divide mixture into four equal portions and spoon each portion into the pocket of the chicken.
  • Brush olive oil all over the top of chicken and season the top with salt, pepper and dried onion, use 1 teaspoons dried onion for each breast. Bake for 25-30 minutes until chicken is golden brown and cooked through.

Her sweets are fantastics, especially her pound cakes, Yummm <br> <br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
