  1. Separate the mushroom stems from the caps. Finely chop stems.
  2. In large skillet, heat oil. Add onion, bacon and mushroom stems and cook, stirring, about 5 minutes. Transfer to a bowl and add corn, Parmesan, thyme, salt and pepper and mix thoroughly.
  3. Stuff onion mixture into mushroom caps, and place on a baking sheet. Bake at 400 for about 15 minutes.
