Stuffed Flank Steak in Crock Pot

  • Stuffing

  • 2 cups seasoned stuffing mix
  • 1 cup beef broth
  • 2 tablespoons butter, melted
  • 2 tablespoons grated parmesan cheese
  • Flank Steak

  • 2 lbs flank steaks
  • 2 tablespoons Dijon mustard
  • 2 tablespoons oil
  • salt and pepper
  • Gravy

  • 1 (1 ounce) package brown gravy mix
  • 2 cups beef broth

directions

  • Slightly score flank steak on each side at 1 inch intervals.
  • Combine stuffing with beef broth, butter and cheese.
  • Spread mustard over flank steak, then spread stuffing over steak and roll up like a jelly roll.
  • Tie with string.
  • Rub with oil sprinkle with salt and pepper on the outside and put into crock pot.
  • Mix gravy and water.
  • Pour over meat.
  • Cover and cook low, 8 hours.
  • Remove meat from crock pot. Stir gravy well to blend (Some of the stuffing mix will come out of the flank steak while it is cooking and this will thicken the gravy a bit more).
  • Slice into serving sized pieces.
  • Serve with gravy on the side to put on the steak and potatoes if you are serving them.

  1. Excellent! Be sure to pound out the flank steak to a thin rectangle before stuffing and tying. Liked the mustard-dijon flavor, but not everyone might...

  3. I thought this was awesome. I didn't measure out the mustard... I just made sure there was a very thin layer. Instead of cooking it in a crock pot (didn't have the 8 hours to spare) I cooked it according to the directions on recipe #62709. Turned out wonderfully and my husband and I liked it so much I'm going to cook it again later this week for his parents.
     
  4. Very good and easy - make a lot of gravy. I didn't measure the mustard, just spread a thin layer on each piece of steak. I used seasoned stuffing for pork because the store had either that or chicken flavor. DIdn't have string handy, so held together with toothpicks.
     
  5. I have never cooked a whole steak in the crockpot before and we all thought this was great. I followed the recipe except I cut the Dijon Mustard back to 1 Tbsp as my son hates mustard. (He went back for seconds so don't tell him about the mustard.) I used recipe #149886 as a substitute for the brown gravy mix. The gravy is just delicious. I will definitely make this again. I grew up in Tucson but moved to Colorado in 1989 and live in a household with my husband, Dad, daughter and 3-year old twin granddaughters. Our 8-year old grandson spends 2 nights a week with us. All of that adds up to often difficult menu ideas to met everyone's tastes. Zaar is very addicting and I love trying the recipes I find here. I like to find recipes of people that I see are still active on Zaar and love it when I hear back from the Chef after I review the recipe. Everytime someone reviews one of my recipes, I like to find one of theirs to make and review as quickly as possible. It's a way for me to find great chefs I don't know yet too! My husband has high blood sugar so we try to watch our carbs, but it is not easy because we love them so much! I was diagnosed with brain tumors in 2005 and so far have had 5 surgeries that have left my eyelid droopy. I hope to have a surgery that will correct that soon!! There is still one tumor they have not removed but my wonderful doctor James Garrity at the Mayo Clinic in Rochester MN says they will leave it alone until or if it ever causes problems!
