- 3 large green peppers
- 1 lb Italian sausage
- 0.5 (12 ounce) bottle beer (we use home brewed beer)
- 1⁄2 cup chopped onion
- 1⁄2 cup water
- 1 cup shredded cheese
- 1⁄3 cup Minute Rice
- 1 (8 ounce) can tomato sauce
- 1 tablespoon Worcestershire sauce
- 1⁄2 teaspoon dried basil
- 1⁄2 teaspoon dried oregano
directions
- Slice the peppers lengthwise and remove stems, seeds, and membranes. Place in boiling water for 3 minutes (makes for a bit firmer texture at end of baking time -- if you want mushier peppers, leave in longer). Place peppers in a baking pan & lightly salt the inside.
- Cook onions & sausage until meat is browned & onions are tender. Add rest of ingredients except the cheese. Bring to a boil, cover and let simmer 20 minutes or until the rice is tender. Stir in 1/2 of the cheese. Fill pepper shells with mixture. Bake at 375 degrees for about 20 minutes. Add the rest of the cheese on top and let stand 3 minutes.
