Stuffed Mushrooms

- 2 lbs fresh mushrooms
- 1 (6 ounce) package chicken stove top stuffing mix
- 1 cup beef broth
- 1⁄2 cup butter
- cooking spray
directions
- Preheat oven to 350* degrees.
- Pull the stems out of the mushrooms; then clean mushroom caps and stems in cold water and let drain in strainer. Place caps on a paper towel and dice stems.
- In microwave proof mixing bowl, add stuffing mix, diced stems and beef broth. Stir until broth is incorporated throughout. Place in microwave on high for 2 minutes. Then add the stick of butter and microwave until butter is almost completely melted about 1 minute.
- Remove from microwave and stir until butter is completely mixed through.
- Lightly spray a large cookie sheet with cooking spray, taking a spoon over fill each mushroom cap until each one has a nice dome on top.
- Place in oven and bake for 20 to 30 minutes depending on the size of the mushrooms and your oven.
- When done let them cool for about 5 minutes on the cookie sheet before placing the mushrooms on the serving tray. Enjoy!

Very tasty. I didn't wash my mushrooms, just wiped them with a damp cloth as I always do. I used my Recipe #135453 in place of the beef broth and added some minced garlic and thyme (as I love those with mushrooms) in step three. And I was able to cut the butter back by half by adding slightly more of the stock. We enjoyed these as a side dish but they'd be equally suitable as appetisers. Thank you for sharing this recipe.
