Stuffed Mushrooms

- 1 lb button mushroom
- 8 ounces boursin cheese (or any herbed cream cheese...Rondele, etc)
- 1⁄4 cup plain breadcrumbs
- olive oil, as needed
directions
- Clean your mushrooms and take out the stem.
- Push a little scoop of cheese into each mushroom so it heaps out a little bit.
- Drizzle with olive oil.
- Sprinkle bread crumbs on the top of each one.
- Bake 20 minutes or as needed until warm and melty in a 350 oven.
- When these are served right out of the oven, the first bite can be drippy -- so serve with napkins!
