Stuffed Pattypan Squash

"This is in response to a request for a low fat veggie for tea time. Sounds good but I've never tried it. I think I will though!"

  • Heat oven to 350°F.
  • Heat 1 inch water to boiling.
  • Add squash.
  • Cook 6 to 8 minutes or until crisp-tender, drain.
  • Cut off stem ends. Hollow out squash; reserve squash shells.
  • Chop squash meat finely.
  • Mix squash and remaining ingredients except cheese.
  • Spoon 1 heaping tsp filling into each squash shell.
  • Sprinkle with cheese.
  • Place in ungreased square pan (9x2x2 inches).
  • Bake uncovered 10 to 12 minutes.
  • Microwave Directions: Place squash and 2 Tbsp water in square microwavable dish (8x 8x2 inches).
  • Cover tightly and microwave on high 3 to 5 minutes or until crisp-tender; drain.
  • Hollow out and fill squash shells as directed.
  • Place in square dish.
  • Cover tightly and microwave 2 to 3 minutes or til hot.
  • *8 small pattypan squash (about 2 1/2 inches in diameter) can be substituted for the tiny squash.
  • Spoon 1 heaping Tbsp filling into each squash shell.

  1. This not only looks attractive but tastes ever so good too. I recommend that you drain the flesh on paper towels after removing it from the shell for a few minutes to remove excess water, I also tipped over the shell on the paper towel then continues with the steos I saved a bit of the breadcrumbs and mixed them with the cheese. They were golden and crunchy on top and ver flavorful inside. Thanks Nancy for a keeper
     
  2. This was so good. My husband didn't like it, and my 4 yo wouldn't even try it, but I LOVED it and will be making it again just for me!! Very low cal, with a huge amount of flavor. I'm not actually sure if what I had was pattypan squash...I used four medium sized instead of 16 small, and it was very fresh tasting. Thanks for posting.
     
  3. This is a very good recipe. Our family had never tried pattypan squash before and my husband liked it so much he asked for it again. Too bad... my sister's garden is out of pattypan for the year... I made it with one large squash instead of many small and adjusted the ingredients appropriately. Thanks for the great recipe!
     
  4. It was my first time ever having pattypan and this recipe made my experience easy and delicious. Definately use a melon scoop to get the flesh out of the melon... it works so well. I added ground pepper, celery and used mozzarella cheese (that's what I had).
     
  5. This was not bad. I thought the stuffing mixture was great, but it was hard to work with (scooping out the flesh without breaking the squash).

Hi, I live in the Ozark mountains in north central Arkansas. I'm married to Jerry for 27 years now and he had our two kids when we married. I didn't have any so he gave me his and I was happy to get them!8-) We have two other boys, JJ and Andy who are a daschund and a maltese respectively. JJ left us to go to doggy heaven in 2004. Now we have another Maltese and her name is Keisha. I usually call her "Keter-bug". I worked with developmentally delayed individuals in a state Human Development Center for 12 years and wouldn't change it for anything else. My favorite cookbook would have to be Joy of Cooking because it's like a Cook's Bible...if you can't find something anywhere else you will find it in there. I don't use it all the time but if I have a question it's the first place I turn. The one I use the most is a Louisiana Junior League cookbook called "Cotton Country Cooking". It has everyday food in it that is what we like to eat the most. I've cooked just about anything I can think of from lobster to raccoon. We even cooked turtle. The thing that I really get peeved about is when people try to be someone they aren't. If you are just yourself you'll come a lot nearer to being who you want to be which is probably accepted and liked by all. I'd like to go to Europe if I had a month off. I've always wanted to go to France because that's where one side of my ancestors are from, England and Wales since that is where the other side originates and then Scotland where even others are from. I think everyone should know their heritage.
