Stuffed Peaches

  • Pre heat the oven to moderately hot.
  • Cut the peaches in half and remove the stones. With a teaspoon remove some of the flesh from the centres. Chop this and place in a bowl with the crushed biscuits, liqueur. egg yolks, sugar, almonds and most of the butter and mix well.
  • Stuff each peach with the mixture and top each with a knob of butter. Put them on an oiled baking tray and cook in a moderately hot oven for 35-40 minutes.
  • Arrange the peaches on a serving dish and sprinkle with icing sugar to serve. Extra biscuits can be served alongside peaches.

  1. These were really good. The recipe intro stated it could be eaten warm or cold, so I made mine early in the day and we had them for dessert that evening, completely cooled off. But the time stated was a bit more than was needed for my oven because the topping scorched a bit and had hardened by the time we ate them. But other than that it was a wonderful dessert. Next time, I think I'll turn the temperature down about 25 degrees and/or take them out sooner so the topping doesn't harden. And I think these would be fabulous served warm right out of the oven.
