Stuffed Reuben Mushrooms

- 16 large fresh mushrooms
- 1⁄4 lb thinly sliced cooked corned beef
- 1⁄3 cup sauerkraut, drained
- 3 tablespoons thousand island dressing
- 1⁄2 cup finely shredded swiss cheese
- 1 teaspoon dried chives, chopped (optional)
directions
- Preheat oven to 350.
- Brush mushrooms or wipe clean with a damp cloth. Remove stems from mushrooms and discard.
- Fold and fit 1 slice of corned beef inside mushroom cap.
- Top with 1 teaspoons sauerkraut, 1/2 teaspoon salad dressing and approximately 1 teaspoon cheese.
- Place on an ungreased sheet pan.
- Sprinkle with chives.
- Bake at 350 for 20-25 minutes or until thoroughly heated.

Really tasty! Loved them for football tailgate party. Made for Football Pool, 2010. -
I made 3 times the recipe for our tailgate party. I did take the suggestion of the other review and dried kraut on a paper towel. I did change the reicpe to make the filling adhere together better- I added 4 oz of cream cheese. Made for 2009 Football pool week 4

I made 6 of these for Buddha as he is the only mushroom lover in our house and he really enjoyed them. I baked them in our convection oven and they were done in just 12 minutes. I did drain the kraut, but the appetizers still came out watery so he recommended pressing the kraut between paper towels next time. Other than that, and topping with more thousand island dressing, they were devine he says. Thanks for sharing the recipe. :)

My parents owned a grocery store when I was growing up, so there's my love of FOOD! My friends all love to drink, so there's my profession! I stopped bartending 5 years ago, when my son was born, but still 'do' private parties. DH and I did a 'Supper Club' for a while, but life kept getting in the way!
I am a SAHM, to a rambunctious 5 y.o....I LOVE cooking and collect cookbooks and anything kitchen related! I'm kinda picky, but will just drop an ingredient or make a sub, so I can still try a recipe.
I'm looking forward to many years of enjoyment here, and hope to participate in some events soon!
