Directions

  1. Preheat oven to 400 degrees.
  2. Combine dry ingredients in a medium bowl.
  3. Combine milk, egg and butter.
  4. Gently stir wet ingredients into the dry ingredients until moistened.
  5. Spoon batter into greased pans (reserving 1/2 cup for topping).
  6. Put 1 teaspoon of strawberry jam into each muffin.
  7. Spoon remaining batter on top of the jam and bake for 15 to 20 minutes.
  8. Remove muffins and cool on wire rack.
