Stuffed Tomatoes

"Really, you could use this to stuff anything--zucchini, potatoes, onions--but you should probably have some tomatoes in the sauce, anyway. We serve them on a bed of brown rice."

  • Cut tomatoes in half and hollow out the halves with a spoon. Keep what you've hollowed out in a separate bowl.
  • Thoroughly blend ground beef, chicken and onions in a large bowl.
  • In a wide, shallow bowl, beat an egg. In another such bowl, blend bread crumbs (or matzo meal) with spices.
  • Stuff each tomato half with the beef mixture.
