Stuffed up Chicken Breast

"This is a recipe my mother used to make when I was a little girl. I loved it because it was a midweek easy recipe that reminded me of Sunday dinner. It's now one of my favorites to cook for my budding family."

  • Heat oven to 400 degrees Farenheit.
  • Rub chicken well with olive oil and salt and pepper. Set aside.
  • Drizzle olive oil in a medium suacepan over medium heat. Toss in onions and celery (apples). Cook until soft.
  • Add baguette cubes and blend well. Slowly add in stock a little bit at a time. Only add until slightly mushy and well moistened. All the liquid should be absorbed. Discard any stock left over. Add sage, rosemary, salt and blend well.
  • In an oiled baking dish place two scoops of stuffing mixture on opposite sides. Make sure that there is enough to fit well under chicken breast. Place chicken breast over stuffing and place in oven.
  • Put any remaining stuffing in a baking dish and place in oven to be served as extra at meal.
  • Cook until juices run clear and stuffing is golden brown. Serve immediatly.

I am originally from New York, but currently I am residing in the original York in England. My husband is an Englishman born and raised and changed my life in a huge way, not just geographically. Moving submersivley into a new culture was one of the best things I could ever do for my cooking. I've loved cooking and baking since I was young and I have always found it soothing. When I moved I sometimes had to alter my recipes to fit the ingredients that were available to me, sometimes these alterations worked for the better! Sometimes they didn't. I find cooking soothing and it gives me a sense of accomplishment. I love cooking for my husband who is in the army and has been eating army food for years now. It's nice to have someone appreciate my hard work. He even cleans the dishes for me... well, at least most of the time he does. One of my favorite things to do when it comes to food is finding ways to make my favorite foods still taste wonderful while using fresher, healthier, and less calorific ingredients. Although I love to treat myself, and my muffin top is proof of that, I also enjoy staying healthy and finding new creative ways of doing it. I also enjoy singing, I am a classically trained singer but don't do it professionally. I love to write and would love to do that professionally, but I think that's a time will tell sort of thing. I also spend a lot of my time reading, playing my wii, spending time with my husband and dog, missing my friends and family back home, and SHOPPING!
