- 4 zucchini, cut lengthwise and hollowed out. Chop up the hollowed out portion
- 1⁄2 lb Italian sausage
- 1⁄2 cup romano cheese
- 2 tablespoons pine nuts
- 2 tablespoons sun-dried tomatoes
- 1⁄2 teaspoon salt
directions
- Preheat oven to 425.
- Cook the sausage in a skillet over medium heat, breaking it into small pieces.
- Add the chopped zucchini and saute for a few minutes.
- Turn the heat off and add the cheese, pinenuts, and sundried tomatoes.
- Place the zucchini in a baking dish.
- Sprinkle the salt over the hollowed out zucchini and fill them with the filling.
- Bake at 425 for 20 minutes.
