  • •Make sure the oven keeps the right temperature. The cookies may need a minute or two more or less than stated.
  • •Preheat oven to 350 degrees F.
  • •Line baking sheets with parchment paper (no need to grease).
  • •Measure flour, baking soda and salt in a large bowl and blend together. Set aside.
  • •In a large mixing bowl, preferably a heavy-duty mixer, and using the paddle or beater attachment, beat butter until creamy.
  • •Add brown sugar and beat again. Scrape down the bowl and add the granualted sugar. Beat until fluffy.
  • •Add eggs one at a time, beating after each addition.
  • •Add vanilla, beat and scrape again.
  • •On low speed, add flour mixture 2 cups at a time, and mix well.
  • •Mix in white chocolate and macadamia nuts. Mix only until blended.
  • •Using a cookie scoop, place dough on prepared baking sheets, spacing evenly to allow for spreading.
  • •Bake at 350 degrees for 10-12 minutes or until lightly browned. Do NOT over bake these cookies. They continue to bake for a few minutes after they are removed from the oven.
  • •Transfer to cooling racks. Store in air tight container or plastic bag to stay soft and moist.
  • •Makes 48 warm and gooey cookies.

  1. So, I worked at Subway for a very loooooong time and I often found myself at the store for over 50 hours each week. These cookies are pretty close to the subway taste and texture! HOWEVER! I strongly recommend lowering the oven to 325 rather than 350, that way you get the Subway experience. Also, you should freeze the cookie dough before you use it. Guess around 24-hours. When you bake them at Subway, they are placed on the sheet frozen and placed into the preheated oven! It is very important to have them in the hot oven. Also. if you follow all of these instructions, pull them at 10 minutes. No later! They will still be a little "big" and haven't spread out but they will when they cool. This is how we make them at the actual stores! Also, if you are really desperate. Ask the manager if you can buy the cookies wholesale. We usually get a box with several bags. It's pretty cheap and most managers are fine with selling you them. Just let them know in advanced!
     
  2. These cookies are delicious! It was a bit tricky to get the cooking time exactly right though. Definitely a good idea to take them out of the oven about a minute before they are completely cooked through in the middle. Then I let them sit in the tray on the stovetop for about 5 minutes before moving them to the cooling rack. Serve with a TALL glass of cold milk!!
     
  3. Thought they were good, but next time Im not going to use so much flour. Maybe 3 1/2 c. will be enough.

  5. I made these cookies exactly like the recipe says. They spread too much so I thought I would freeze them. Did that baked them and they still spread out and they were thin.I have checked out the ratio of butter to sugar and I think the recipe is wrong. One pound of butter seems like a lot. Maybe one -one and a half cups. When I picked the cookie up and put it on the rack my hands were really greasy. I have eaten the cookie at Subway and it was not like this. I did not like this cookie at all. Will not be making it again. If I did I would cut back the butter.

  1. Thank you for the recipe. These turned out very well, very similar if not better than subway. My boy loved making them. We substituted the nuts with chocolate chips.

Even though I am still young (25) Life experince has aged me alot. I learned to cook at both of my grandmother's knees (One southern American, one southern Irish) when I was about five. By ten I started collecting cookbooks and experinmenting on my own. As a latch key kid I cooked for my four younger brothers and sisters. My mom ran a small deli before she died when I was 17 so alot of my recies debuted there. Now I run my own catering Buisness. I am married to a wnderful man for five years now.
