Sugar Free Caramel Corn

"Haven't tried this yet, but I have modified our favorite caramel corn recipe to make it "Belly Fat Cure" friendly."

ingredients

  • 1 cup xylitol sugar substitute
  • 12 cup butter
  • 1 teaspoon baking soda
  • 4 cups popped corn

directions

  • melt butter in large sauce pan, add xylitol and cook over med heat for 2-3 minutes. Working very quickly, add baking soda stirring as it foams. As foaming subsides, drizzle over popped corn.
  • Bake at 275 for 1 hour, gently stirring every 15 m inutes.

  1. Made this exactly as per recipe, did not cook as long. Turned out perfect. We mixed splenda and cocoa powder and cinnamon, dusted it. YUMM!
     
  2. The amount of popcorn is not correct. I think maybe you mean 4 quarts of popped popcorn. I thought it sounded wrong, but I found out for sure when I made 4 times the caramel sauce and 5 times the popcorn. There was still way too much caramel. I think if someone figures out the right ratio this will be a good recipe.
     
  3. I'm sorry, I really wanted this to be a good recipe, but I just don't think so. Maybe I did something wrong. The "caramel" sauce, seemed to drown the popcorn, and although the extra liquid evaporated in the oven, it turned Cracker-Jack brown and I ended up taking it out in about a half-hour. The texture is different than regular caramel corn, and so is the flavor (although, the flavor wasn't too bad). I think, considering the price of Swerve, I will not be trying this one again. And so I move onward, in my quest for sugar-free caramel corn. Thanks, anyway.
     
  4. This is more of a question than a review. Can anyone tell me if baking the caramel corn for 1 hour at 275 degrees is absolutely necessary? I tried it and ended up taking it out after only 30 minutes. It seemed to me that it was burning and tasted better before I ever baked it at all. Thank you!!

My DH and I (34 yrs) had an empty nest for about 4 years. In Sept 07 our 20 something daughter moved back and in April 08 her oldest sister move in with our 3 grandchildren, 7, 6 & 2. I own my own business and work from home. Believe me this was much easier when it was me and the cat all day. I come to RecipeZaar frequently looking for new ideas, things that the kids will enjoy, as well as us grown-ups. The 2 older boys are die-hard chicken nugget or hot dog fans. Never a dull moment! I just keep telling myself that it keeps me young! I am famous for my Prime Rib sandwiches. I serve them for the Rose Bowl and Super Bowl get togethers. I can never make enough......
