Sugar Free Short Bread Cookies

ingredients
- 1 1⁄2 cups flour
- 1⁄2 cup Splenda sugar substitute
- 1⁄2 cup cornstarch
- 1 cup butter (I used Parkay Marg as I don't have the $$ to buy butter during test recipes- but turned out just as )
directions
- Put in a food mixer till smooth.
- Roll into a long sausage and wrap in plastic wrap/freezer for ½ or till you want to bake.
- Oven 350.
- Cut into cookie size.
- Bake 20-25 min till firm.slightly brown edge.
- Take out and sprinkle with splenda, Looks festive.

I've made this recipe twice. The first was using store brand butter. They turned out great! I shared them with a neighbor who was surprised they didn't have sugar. The second time I "upgraded" to Irish Grass-fed butter. After baking half the recipe I discovered that the extra richness in that butter made the dough too "short". Using my food processor, I took the remaining dough and remixed in about 1/4 cup of flour. That corrected the "shortness" of the dough. I will continue to use this recipe
