Sugared Cranberries and Sage Leaves

  • Bring water and 1/2 cup sugar to a boil in a small heavy saucepan, stirring until sugar has dissolved, then simmer, uncovered, 2 minutes. Remove from heat.
  • Put remaining 1/4 cup sugar in a small bowl.
  • Lightly brush cranberries and both sides of sage leaves with sugar syrup, then immediately roll in sugar.
  • Transfer to a lightly oiled rack and dry at room temperature, 2 to 3 hours.
  • Cooks' note: Sugared cranberries and sage leaves keep, chilled in 1 layer in a baking pan, uncovered, 3 days.

  1. I loved the idea of these as a beautiful element to adorn our holiday table. Though the directions are clear, these were a good deal more complicated to prepare. The cranberries were quite simple and easy to prepare. They easily went from the simple syrup to the sugar without incident. Set up rather nicely as well. The sage was more complicated and timing became a real issue. As it turns out there is a rather small window when the syrup is the right temperature to result in a beautiful garnish. Too hot and the syrup does not adhere to the leaf and you end with small bald patches. Too cool and the sugar clumps from the moisture. Rather tricky in execution. I ended up returning the syrup to warm a few times and changing out the sugar as well. (Start with a tablespoon or two that you can discard after a few leaves.)
     
  2. Very decorative and easier to make than I would have expected. I only made the cranberries but as a decoration only I would love to use this method with holly one day. Thanks for this lovely recipe!
     
  3. I used this method to make sugared strawberries and they turned out beautifully. Very good and easy method for sugaring if you don't want to use egg whites. I will definitely use this method again.
     
  4. I chose this recipe for my Sage theme Thanksgiving and am glad I did. They were BEAUTIFUL and TASTY. The sugar was enough to offset the sour cranberries. The sage leaves were interesting to try with sugar. I made these fast and easy although a little messy...I dumped the cranberries into the cooled sugar syrup and then rolled them in a bowl of sugar and laid them out on a paper plate...then dipped each sage leaf one by one into the syrup and rubbed them into the bowl of sugar. I let them dry at room temperature overnight then put them in a large ziploc bag on the paper plate. They transported well and lasted. Made for Zaar tag.

I have chronic medication resistant depression after 10 years on anti depressants that worked well but would stop working after a year or two, so now do my best at home living on disabilty. Not a bad thing, many have far worse health issues but i have been able to concentrate on food/cooking. My main passions are my cats. I live in the woods and somehow many starving strays or "dumps" have found the message babies who passed on left in the woods saying "suck lives at xxxx road. Most arrive sick and/or starving. Right now i have 2 that arrived with feline herpes and their attendant 2ndry bacterial infections but are doing beautifully. One old man who was going to be euthanized bc a lady who found him as a stray was moving and didnt want him...well he was a biter and rather grumpy who was in ICU for 3 days with a deadly gut infection which was fixed but he left with a diagnosis of diabetes. 3 months on insulin and finally diet controlled and he caught the herpes virus, respiratory symptom version and turned into a cuddler. Butterscotch must think "why didnt i figure out this cuddle stuff was great before i got sick!" Doing wonderfully even though he has bouts. he and the other kids are my babies. Sadly Butterscotch died of Lymphatic cancer in winter of 2008. A year before Big Boy arrived in my life, starving and weak. Full of affection he jumped into my arms and stayed, turns out he has FIV (cat hiv) so he needs to be watched closely.
