Sugared Lime and Mango Cheeks

  • Slice the cheeks from the two mangos. To do this you cut from top to bottom of the mango, feeling for the seed and slicing around it. Remove the cheeks as close to the seed as possible. Leave the skin on.
  • Lay the mango cheeks, skin side down onto a large plate.
  • Drizzle over the lime juice, graed lime rind and then sprinkle over the brown sugar.
  • Cook on a grill, flesh side down, until lightly browned.

I had to eat it very carefully because I react to mango if it touches my lips when I eat it, but I just had to make this because I love mangoes and the recipe name makes me giggle. I don't have an outdoor grill, and my indoor grill plates were in the dishwasher, so I had to broil these instead (not as pretty, but just as tasty). Loved the tang of the lime with the sweetness of the mango and the caramelly sugar. I'll definitely be making these again (eating very carefully, of course, lol), thanks for posting!
