Directions

  1. Boil potatoes in skins until done. Drain and cool.
  2. Skin and bone chicken breasts and cut into bite-sized pieces.
  3. Chop peppers.
  4. Combine potatoes, chicken, peeled and sliced cucumber and peppers.
  5. Add chopped spring onions and herbs.
  6. Mix together remaining ingredients and pour over salad.
  7. Serve on lettuce lined plates.
