  • In a large skillet, combine salsa, peanut butter, honey, orange juice, soy sauce, red pepper and ginger.
  • Over low heat, cook until heated through, stirring occasionally.
  • Sir in the cooked fettuccine and chicken.
  • Evenly coat.
  • Place salad greens on serving platter and top with fettuccine mixture.
  • Toss before serving.

Whoo hoo! I finally graduated from college in June. I love to cook and experiment with new recipes! I also like to read, when I can, and ski. My favorite cookbook is anything by Racheal Ray. She came down to Ashland for her $40 a day show. That was exciting.
