  • Heat oil in medium pot.
  • Add onion, garlic, chili powder, and cumin.
  • Saute over medium heat until onion is soft (about 5 minutes).
  • Add remaining ingredients and stir.
  • Bring to a boil, then lower heat and simmer 20 minutes or until vegetables are soft.
  • Add more liquid if needed.
  • Serve over brown rice, garnish with cheese, sourc cream and cilantro if desired.

  1. This was great I did not use the cayenne pepper and used regular tomato sauce but did use 1/2 the amount of hot chili powder . I addded a can of kidney beens (just not chili with out them)
