Sun Drenched Pasta Salad

"This wonderful pasta salad was created to remind me of a sunny day on the Mediterranean, loaded with fresh vegetables, olives, sundried tomatoes, Parmesan and fresh basil. I have also added grilled chicken to this dish, which makes it even better. For vegetarian omit the shrimp and chicken."

  • Cook bow-tie pasta according to package direction in a large pot of boiling, salted water.
  • Add the brocolli to the pot for the final two minutes of cooking.
  • Drain well.
  • In a very large bowl, combine all the other ingredients, gently combining to thoroughly coat salad with the dressing and seasonings.
  • Taste and adjust salt, pepper, Parmesan, red pepper flakes, or additional oil and vinegar.
  • Refrigerate for a few hours before serving.

  1. This was such an easy and delicious salad. My church does a potluck service every week and I took this dish this time and everyone enjoyed it! My children weren't to fond of it lol, but the adults all raved! This will definitely be in my regular potluck rotation! Thanks!
     
  2. Well the sun hasn`t been out for 2 months but this salad brought it out for me! Follow everything except the dressing. In a blender I put the marinate from the articokes, a couple of anchovies, a squeezed lemon, the 3 cloves of garlic, Italian seasonings, a little bit of dijon. Blended and added oil while blending to make a nice rich dressing. Geema,Great stuff!!!

<p>Life often interupts our comfortable routines in very unexpected ways and in the past three years I've certainly faced some challenges.&nbsp; As a health nut who ate mostly vegetarian I was beyond shocked to discover that I was diabetic.&nbsp;<img title=Yell src=../tiny_mce/plugins/emotions/img/smiley-yell.gif border=0 alt=Yell /> I shouted and rebelled and cried.&nbsp; But the good news is that I can control my glucose levels simply by eating very low carb.&nbsp; What a complete turn around it was to&nbsp;pass up&nbsp;all my high carb vegetarian foods like grains, and veggies and embrace meat!&nbsp;<img title=Surprised src=../tiny_mce/plugins/emotions/img/smiley-surprised.gif border=0 alt=Surprised /> I've adjusted to this limited diet and thanks to Zaar can eat a nice variety of healthful meals.</p> <p>&nbsp;The next challenge was a freakish fall I took while in New York with my daughter that left me paralyzed and in much pain.
