Sun-Dried Tomato Cashew Spread

"From www.yourveganmom.com. I made this for my 3-year-old nephew--a very picky eater who comes from a mac n cheese/pizza roll family--when he visited our vegan home for a week. Great on crackers, toasted baguettes, pretzels, as a veggie dip or on a sandwich. Has a very cheesy flavor."

  • Grind cashews finely in blender or food processor.
  • Add the other ingredients, and process until smooth.
  • Serve immediately, or chill. The spread will thicken in the fridge.

I'm an ethical vegan, atheist, wife and stay-at-home mother of a 7 year old DD and 1 year old DS. I have also been known to hug a tree from time to time, but I don't do it professionally. I love life, walk around in awe of the universe, and am always made happier by things that smell delicious. Like pumpkin pie spice. And turmeric.
