Sunday Supper Gramma Richter's Potato Salad

"UPDATED: Serving again at August 2015 Sunday Supper in the outdoor "Can Shelter" at Warner Park, Madison, Wi. Serving at May 2015 Sunday Supper @ WPCRC, Madison, Wi. Grandmother Richter's potato salad that always had a stronger mustard taste than the Matthews family. She says boil potato first then peel. If not done this way NO GOOD, Enjoyed at many Richter clan get togethers when I was not working in the retail business during the get togethers. Grandmother Mike often referred to me as "What's his name?" Her humor was very bold and to the point. Always remember the morning after New Years when "what's his name" was feeling very lousy. That little tiny woman looked at me and says, " do you know the best cure for a hangover?" Nooppee! Mike looked at me and very lovingly, motherly, and sympathetic, says 24 HOURS,"

  • Cook red potatoes, peel when warm.
  • Put eggs in pot, cover with water bring to a full rolling boil. Turn off heat and let sit 25-30 minutes, peel and slice.
  • Mix all other items for dressing.
  • Alternate layers of warm potatoes, chopped onion, and dressing.
  • Then mix together and cool in refrigerator.
  • Serve with sliced eggs and paprika on top.

Having spent the last 40 years selling recreational equipment in Southern Wisconsin, I have closed my business and finally have time to cook. I never sold anything that anyone ever "had to have". SO NOW I'M LEARNING HOW TO PREPARE THINGS, FOLKS HAVE-TO-HAVE! Been great fun and love to expermint. My wife says I cook weirdsville.
