  • Heat oil in medium saucepan; add celery and onions and saute until tender (about 10 minutes).
  • Add water, juices, and hot sauce; bring to a boil; stir in rice and bring back to boil, let stand covered until rice is tender and liquid is absorbed.
  • Stir in almonds,Serve immediately.

  1. We are citrus "Fanatic"s! I thought the flavor was perfect. Having so much celery and onion with less rice made the dish unique and very satisfying. We used Jasmine rice (since the recipe called for long-grain white rice) but next time we will make it with brown rice. We served curried salmon with this rice and all of the flavors held up nicely against the coconut and spices. A+

  3. This recipe was very easy to make. You can really taste the orange juice in the finished product. My family, however, did not like it. Not that there is anything wrong with the recipe-I wish we had liked it because it was easy and did exactly what I expected it to do cookingwise-we found the taste too orangey for us and just a little bitter.
     
  4. I enjoyed this recipe on two levels. First I prepared it "by the book" except I used a blood orange to give it a pretty color, I chopped up some whole raw almonds and roasted them and I only has basmati rice in the house so that's the only other change I made.. It was light and VERY tasty - especially for a "healthy" dish. But, after trying it in its "healthy" 5* form, I could not resist adding a little unsalted butter, because basmati rice is so good that way, and I sprinkled a little kosher salt on top. This was also a 5* combination. This is a great recipe to meet a variety of needs - my mom, who is on a special diet, liked it the first way, and the rest of us enjoyed it the "naughty" way. I’m sure I will enjoy it both ways, many times to come! This is a great combination; thanks Barb!
     
  5. This is excellent! I had this for lunch today afternoon and enjoyed the flavours in this immensely. I love the colour of this rice and it is just so pleasing to the eyes. {Recipes as pretty as this make me wish I was a cow with more than one stomach! LOL}. My cook prepared this for me and accidentally added in 1/2 tsp. of salt for which I did get upset and told him that when a recipe does not mention it nor do I, he does not have to add it. The rice is amazing and went very well with Cauliflower in Five Spices{recipe # 82836. I will make this aha rice again. Thank you for posting the recipe! :)
