- 1 (18 ounce) box yellow cake mix
- 1 cup carrot, pureed
- 1⁄4 cup water
- 2 eggs
- 1 teaspoon mixed spice
directions
- Preheat oven to 180 degrees Celcius. Coat a 9 inch square cake pan with cooking spray.
- In a large mixing bowl combine all ingredients. Beat until smooth.
- Pour the batter into the cake pan and bake until a toothpick inserted comes out clean - about 25 minutes.
