  • Put first four ingredients in saucepan. Bring to boil.
  • Simmer uncovered for 5 minutes.
  • Meanwhile pour boiling water over noodles and stand 5 minutes. Drain.
  • Add chicken fillets sliced to stock mixture, simmer 2 minutes.
  • Stir in green onions, snow peas and soy sauce.
  • Divide noodles amongst four bowls, top with soup, bean sprouts, herbs.
  • Serve with lime wedges and extra chilli sauce if desired.
