- 4 cups store bought chicken stock
- 1 garlic clove, chopped
- 1 tablespoon ginger, shredded
- 1 red chile, sliced
- 100 g rice noodles
- 2 chicken breast fillets
- 3 green onions, chopped
- 60 g snow peas, sliced
- 2 teaspoons soy sauce
- 1⁄2 cup bean sprouts
- 1⁄3 cup mint, finely chopped
- 1⁄3 cup coriander, finely chopped
- lime wedge
- chili sauce
directions
- Put first four ingredients in saucepan. Bring to boil.
- Simmer uncovered for 5 minutes.
- Meanwhile pour boiling water over noodles and stand 5 minutes. Drain.
- Add chicken fillets sliced to stock mixture, simmer 2 minutes.
- Stir in green onions, snow peas and soy sauce.
- Divide noodles amongst four bowls, top with soup, bean sprouts, herbs.
- Serve with lime wedges and extra chilli sauce if desired.
