  • Put olive oil in large pot ( just cover bottom of pot-it doesnt take much and the olive oil gives it a nice flavor) .
  • Saute onion and green bell pepper.
  • Add water , potatos, corn (juice too) and sausage. Cook until potatos are soft.
  • In seperate bowl melt butter with flour to make your roux.(I do it in the microwave for about 1 minute).
  • Add roux and evaporated milk and seasonings. Simmer until thickened.
  • ENJOY!

  1. This needed more seasoning.I used half the oil, butter and flour and it still came out rich and tasty. I also used frozen corn as there was no canned corn on hand, and ham, as we had to use it up. My ailing hubby had three fortifying bowls. Great tip about making roux in the microwave!

  2. This didn't work for me. I think the 2 cans of corn added too much sweetness which threw all the flavors off balance

I am a wife and stay at home mom of my 3 yr old and 20 month old daugters. I Never really liked to cook but my husband was tired of the same ole' same ole' that I was making for dinner. So one day I stumbled on RecipeZaar and my husband told me last night that he "loved RecipeZaar!" I love to bake all kinds of goodies but am always trying to find a good dinner recipe. My mom grew up in Slidell, LA so most of the food I ate growing up had some southern/cajun flavors. I love to "nest" as my husband calls it. Making curtains, blankets, painting my house, etc. Just making my house a home. But I also love to scrapbook and spend time with my Bunco friends.
